Slow Cooker Chicken Parmesan Soup



This soup is a tasty and comforting take on the classic Chicken Parmesan. It's great for a cold night in. With the ease of a slow cooker, it's simple to make and full of Italian-style flavors.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can 28 oz crushed tomatoes
  • 4 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil, for garnish

Instructions:

In a slow cooker, combine diced chicken, chopped onion, minced garlic, crushed tomatoes, chicken broth, dried basil, dried oregano, dried thyme, salt, and pepper

Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender

Stir in grated Parmesan cheese until melted

Serve hot, garnished with shredded mozzarella cheese and chopped fresh basil
