Ingredients:
- 1 9-inch unbaked tart shell
- 1 cup canned pumpkin puree
- 1/2 cup brown sugar
- 2 eggs
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup crushed amaretti cookies
- Whipped cream, for serving optional
Instructions:
Set the oven to 350F 175C and heat it up
Mix the pumpkin puree, brown sugar, eggs, heavy cream, vanilla extract, cinnamon, ginger, nutmeg, and salt in a large bowl using a whisk until the mixture is smooth
Cover the bottom of the tart shell with the crushed amaretti cookies
Spread the pumpkin mix on top of the amaretto cookies in the tart shell
It should be baked for 40 to 45 minutes, or until the crust is golden brown and the filling is set
Let the tart cool all the way down before cutting it
If you want, you can serve the tart slices with whipped cream
