Funfetti Sugar Cookie Cake - TGIF - This Grandma is Fun



Enjoy the joy of a massive funfetti sugar cookie cake. This recipe combines the classic flavors of sugar cookies with a playful burst of rainbow sprinkles to create a delightful treat for people of all ages.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup buttermilk
  • 1/2 cup rainbow sprinkles

Instructions:

Set the oven to 350F 175C and heat it up

A 9-inch round cake pan should be greased and floured

Mix the flour, baking powder, baking soda, and salt in a medium-sized bowl with a whisk

While the butter is soft, add the vegetable oil and sugar to a large bowl

Mix the ingredients together until the mixture is light and fluffy

One egg at a time, making sure to mix well after each addition

Add the almond extract and vanilla extract and mix well

Slowly add the dry ingredients to the wet ingredients, mixing in buttermilk every so often

Don't mix any further than that

Carefully fold the rainbow sprinkles into the batter so that they are spread out

Smooth the top of the batter with a spatula after spreading it out evenly in the cake pan that has been prepared

In a hot oven, bake for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean

Let the cookie cake cool for ten minutes in the pan, then move it to a wire rack to cool all the way down

If you want, you can add more rainbow sprinkles to the cookie cake after it has cooled
