Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 3 cups broccoli florets
- 1 red bell pepper, thinly sliced
- 1/2 cup sliced carrots
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon cornstarch
- 1/4 cup water
- Salt and pepper to taste
- Cooked rice, for serving
Instructions:
Combine the soy sauce, oyster sauce, hoisin sauce, cornstarch, and water in a small bowl
Put aside
In a large skillet or wok, heat the vegetable oil over high heat
Add the minced ginger and garlic, and saut for 30 seconds or so, or until fragrant
Stir-fry the chicken pieces for 5 to 7 minutes, or until they are cooked through and turn white
Take out and place aside the chicken from the skillet
Add extra oil to the same skillet and add the carrots, broccoli, and red bell pepper after that
Stir-fry the vegetables for 34 minutes, or until they are crisp-tender
Place the cooked chicken back into the skillet and cover everything with the sauce mixture
Add more 2-3 minutes of stir-frying and stir-frying until the sauce thickens and coats the ingredients
To taste, add salt and pepper for seasoning
Over cooked rice, serve the hot stir-fried chicken and broccoli
